Assemble the ingredients
Description: Grilled Swordfish with pineapple, brown sugar, glaze.  
Top with herbed olive oil mix.  Not really a recipe,more of a concept.
This glaze would be great on Salmon and Chicken too!

These are the ingredients for the glaze.
The glaze simmering away...mmmm!
This is the swordfish I got at the Fish
Market at Fisherman's Outlet. $12.
Season with s&p & EVOO. Look how
thick!  I cut it in half and cooked half.
Sizzle away and watch it cook!  Rotate
90 degrees half way through each side.
Flip and glaze generously! Gorgeous!
Glaze second side & enjoy!
I served it with a herb, garlic, evoo mix
and left over cucumber salad from

Beautiful aroma and lovely to look at.
My herb, garlic mix.  Parsley, Cilantro,
Garlic, Red Pepper Flakes and EVOO
in the food processor.  Good on
Chicken, Fish, Steak and BREAD!!!  I
used the leftovers in my scrambled
eggs! wow!
My piece of fish cost $12 and I got 4
HUGE meals out of it.  Pretty good for
premium protein.  And soooo tasty.  
Even when you store your fish in the
fridge, pile a bag of ice on top of it to
keep it fresh, fresh, fresh!  Don't
overcook your fish.  Season only with
salt and pepper, put the olive oil on the
fish, not in the pan. You will use less and
the oil won't burn.



Approximate amounts of glaze
ingredients.  It doesn't have to be exact.

1/2 Cup Pineapple juice, I kept some
chunks in.

mix in small pan with 1/2 Cup brown
sugar.
big squirt of dijon
big squirt of lemon juice
splash or 2 of soy sauce
1/4 Cup apple cider vinegar, white
vinegar will also work.

Bring to a boil and then let simmer on
low to thicken slightly.  Keep close by to
brush on fish.
